For the last few months, I’ve been falling more in love with fauxtmeal for those of you who don’t know…”fauxtmeal” is a cute word for faux oatmeal, which is basically made with just egg and banana. You’re probably looking at your computer saying “NO WAY” right about now, but I’m serious fauxtmeal is the real deal, and it’s totally taken over my mornings.
Even though breakfast food is by far my favorite, I’m definitely not a morning person.
I pretty much survived college by chugging boatloads of coffee, even though I somehow managed to not have any classes before 9 AM. Even after graduating, my job had a later start…You know how Garfield hates Mondays? That’s how I feel about mornings.
And I never had much of a reason to change my habits until I became a mom.
Hit-the-ground running mornings became the norm and coffee just wasn’t cutting it anymore. Fruit and I have always been cool like the other side of the pillow (check out these nomalicious frozen yogurt bites!) so I was inspired to make this super easy breakfast that cuts down on grains.
Strawberry Banana Fauxtmeal is an excellent alternative to oatmeal because it’s lighter for those warm summer mornings, cooks very quickly, and (in my version) only calls for 7 easy ingredients!
If you’re new to fauxtmeal, this might sound a little crazy but trust me…
It’s also a great breakfast for the kids! Our little guy definitely approves, which makes me happy as I try to transition him out of the toddler bread crazy stage.
I’d probably make this for breakfast every morning if Joe wasn’t allergic to bananas… *SIGH* but I digress…
The banana flavor is the MVP in this recipe so you’re mostly getting the egg in there for texture.
Think a lighter banana bread without the flour. The smell of warm cinnamon and vanilla, the burst of flavor from the strawberries, and the big crunch of almond is definitely going to get your brain up and running.
Strawberry Banana “Fauxtmeal”
Recipe type: Breakfast
- 1 egg
- 1 ripe banana
- 1 pinch baking powder
- ¼ tsp vanilla
- ¼ tsp cinnamon
- 3 strawberries, sliced
- 2-3 tbsp sliced almonds (optional)
- Mash banana with fork until mostly liquid
- Combine egg with mashed banana, vanilla, baking powder, and cinnamon
- Spray pan with non stick spray (optional)
- Over medium heat, pour mixture into pan, stirring occasionally using spatula
- Cook for 3-5 minutes (cooking time may vary)
- Mixture is done when soft clumps form and no liquid remains in the pan
- Top with sliced strawberries, bananas, almond and pinch of cinnamon, if desired
